WFMW-Goldfish Chicken

I used to be a menu planner - as in, make a menu for 2 weeks worth of dinners and then grocery shop accordingly. Now I'm a sale/coupon shopper and I just can't seem to merge the frugal shopping and menu planning into one. So I make dinner on the fly now. It's tough coming up with new ideas an hour before dinner, and tonight was no different. I wanted something easy...like shake and bake chicken. Checked the pantry: no shake and bake. No bread crumbs. But there on the very top shelf was an un-opened bag of goldfish crackers, and suddenly Goldfish Chicken night was born.

Here's how it went down:

Defrosted chicken in microwave.
While it was chillin' out in the microwave, I took a couple handfuls of goldfish and put them in a ziplock and smashed them to smithereens. (Poor little guys...they never saw it coming). Then I added some basil, garlic powder and fresh ground pepper to the mix.

I then beat one egg, and added a little milk to make the egg batter go a little farther. (For stick-to-it-ness. Essentially, this was my glue to get the crackers to stick to the chicken.)
Dipped the chicken into the egg/milk mixture, tossed the chicken into the bag and shook it until it was coated.
Popped that chicken into the oven at 350 for about 20 minutes or so, and Presto! Goldfish chicken.


Two thumbs up from the hubby.
Two thumbs up from the toddler.
Two thumbs up from the Mama who is trying to make new dinners with what we've got on hand.

Next week...cheerio and craisin hamburgers!! (I kid...I kid...that just sounds gross!)

    I make the same recipe but with Cheese It crackers. The toddler (who only eats hot dogs and chicken nuggets) gave it two thumbs up so it's definitely a 'keeper' recipe!

  3. Sounds yummy! My sister makes something similar with cheez-it crackers. I have to menu plan - even down to what day I am cooking what or I would never cook :)

    I can't coupon - my brain cannot wrap around the concept - I need help!
